Ingredients

  • large bell pepper green cut into 1 1/2-inch pieces
  • large and orange peppers cut into 1 1/2-inch pieces
  • large bell pepper red cut into 1 1/2-inch pieces
  • large onion red cut into 1-inch pieces (4-inch diameter)
  • tablespoon taco seasoning old el paso® (from 1-oz package)
  • tablespoons vegetable oil

Directions

  1. Heat oven to 450°F.
  2. In large bowl, mix oil and 1 tablespoon plus 2 teaspoons taco seasoning mix.
  3. Add vegetables; toss to coat.
  4. Spread in single layer in ungreased 15x10x1-inch pan.
  5. Roast uncovered 10 minutes; turn. Roast about 7 minutes longer or until vegetables are crisp-tender.
