  • 1 teaspoon baking soda 
  • 0.5 teaspoon cinnamon 
  • 2 teaspoons cinnamon 
  • 10.8 oz condensed tomato soup canned
  • 1.3 cups confectioners' sugar 
  • 0.5 cup brown sugar dark
  • 2 large eggs 
  • 2 cups flour all-purpose
  • 1 teaspoon ground ginger 
  • 0.5 teaspoon ground nutmeg 
  • 2 tablespoons milk 
  • 0.5 teaspoon salt 
  • 0.5 cup sugar 
  • 1 stick butter unsalted at room temperature

Directions

  1. Make cake: Preheat oven to 375F. Butter and flour a 10-inch tube pan. Stir together dry ingredients. With an electric mixer on high speed, beat butter and both sugars until fluffy.
  2. Add eggs one at a time, beating well after each.
  3. Reduce mixer speed and add dry ingredients to butter mixture in 3 batches, alternating with soup.
  4. Scrape batter into pan.
  5. Bake until a tester inserted in center of cake comes out clean, 35 to 40 minutes.
  6. Let cool in pan on a wire rack for 10 minutes, then invert onto rack and cool completely, about 2 hours.
  7. Make glaze: Stir together confectioners' sugar, milk and cinnamon until smooth. Spoon glaze over cake.
