Ingredients

  •  avocado chopped
  • 0.3 cup cilantro leaves chopped
  •  grapefruit red cut into bite-size pieces
  •  mint leaves julienned
  • 0.3  onion red sliced
  • servings salt 
  •  serrano chiles sliced
  • tablespoon sugar 
  • 0.3 cup vinegar white

Directions

  1. In a small bowl, combine vinegar and sugar.
  2. Whisk together until sugar is mostly dissolved.
  3. Add onion and chiles, and stir.
  4. Let sit for 30 minutes to marinate.
  5. Drain vinegar mixture, reserving the pickled onions and chiles. Discard the vinegar, or reserve for another use.
  6. In a medium bowl, combine the grapefruit segments, cilantro, mint and salt.
  7. Mix in onions and chiles, and check for seasoning.
  8. Add avocado, and gently toss to combine.
  9. Serve with chips or over any meat, like grilled chicken.
