Ingredients

  •  crusty baguette 
  • large carrots shredded with a grater or peeler
  • servings cilantro leaves 
  •  cucumber peeled seeded cut into strips
  •  jalapeno sliced
  • servings mayonnaise 
  • pound pork chops boneless thin
  •  onion red thinly sliced
  • 1.5 cups rice vinegar 
  • servings salt and pepper freshly ground
  • servings sriracha 

Equipment

Directions

  1. In a small bowl, add rice wine vinegar.
  2. Combine with 1 teaspoon (or more) of Sriracha, and whisk until mixed.
  3. Add sliced carrots, cucumbers and onion.
  4. Place in the refrigerator, and let sit 20 to 30 minutes.
  5. Sprinkle pork chops with salt and pepper. In a sauté pan over medium-high heat, cook pork until browned, just a few minutes on each side.
  6. Remove from pan, and cut on the bias.
  7. Split the baguettes down the middle, and coat with thin layer of mayonnaise.
  8. Add desired amount of Sriracha over the mayo.
  9. Layer with pork chop slices, paté slivers, jalapenos and marinated vegetables. Top sandwich with cilantro, and serve.
