This sumptuous treat is perfect for any occasion, delivering rich chocolate flavor in every bite. Imagine sinking your fork into a moist, decadent cake that not only satisfies your sweet tooth but does so without any gluten, making it a fantastic option for those with dietary restrictions.

What sets this cake apart is the luxurious pairing of high-quality dark chocolate and ground almonds. The chocolate, comprised of at least 70% cocoa solids, infuses the cake with an intense, deep flavor that lingers on your palate. The ground almonds provide a nutty undertone while contributing to the rich texture that makes this cake feel like a true celebration. With only six large egg yolks, this recipe is also elevated by the lightness created from whipped egg whites, resulting in a cake that’s both divine and airy.

This cake is not just an ordinary dessert; it's a masterpiece that can easily be made in just over an hour and serves eight, making it ideal for family gatherings or special celebrations. Top it off with a light dusting of cocoa powder and a dollop of crème fraîche for that ultimate finishing touch. Ingredients

  • 100 butter diced for greasing
  • 140 chocolate dark 70% with cocoa solids, broken into pieces
  • large eggs separated
  • 140 almond flour
  • tbsp kirsch liqueur
  • pinch salt
  • 85 sugar
  • servings cocoa powder

Equipment

  • bowl
  • frying pan
  • oven
  • whisk
  • cake form

Directions

  1. Preheat the oven to 170C/Gas 3/fan oven 150C. Grease a 23cm/9in springform cake tin and line the base with greaseproof paper or baking parchment. Dust the sides with a little flour.
  2. Put the chocolate and butter into a heatproof bowl set over a pan of gently simmering water.
  3. Heat until melted, then remove the bowl from the pan and stir until smooth. Leave for about 5 minutes to cool slightly.
  4. Stir in the egg yolks, ground almonds, and the liqueur, if using.
  5. Put the egg whites into a large bowl, add a pinch of salt and whisk until soft peaks form. Continue whisking, sprinkling in the sugar a little at a time, until stiff peaks form. Stir 2 tablespoons of the whites into the chocolate mixture, then carefully fold in the remainder until no traces of white are left.
  6. Spoon the mixture into the prepared tin and bake for 30-35 minutes until well risen and just firm to the touch. Cool in the tin (dont worry if the cake sinks and cracks slightly it will still be fine). You can make the cake up to this stage up to four days ahead and keep it in an airtight container in a cool place. It also freezes well for up to one month.
  7. To serve, remove the cake from the tin and peel away the lining paper. Sift cocoa powder liberally over the top and cut into slices.
  8. Serve with crme frache.
