Ingredients

  • 0.1 teaspoon pepper black
  • ounces extra-firm tofu drained
  • 0.5 cup green onions chopped
  • tablespoon soya sauce low-sodium
  • teaspoon olive oil 
  • cup quinoa uncooked
  • 0.3 teaspoon salt 
  • tablespoon sesame seed 
  • 1.5 cups vegetable stock

Directions

  1. Place tofu on several layers of heavy-duty paper towels; let stand 20 minutes.
  2. Cut into 1/2-inch cubes.
  3. Heat oil in a medium saucepan over medium heat.
  4. Add tofu and seeds; saut 3 minutes.
  5. Remove tofu mixture from pan.
  6. Add quinoa to pan; cook 3 minutes, stirring frequently.
  7. Add stock and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes.
  8. Place in a large bowl.
  9. Add tofu mixture, green onions, soy sauce, and pepper; toss.
  10. Totals include Vegetable Stock.
