Ingredients

  • teaspoon sesame oil dark
  • 14 ounce less-sodium chicken broth fat-free canned
  • cup green onions thinly sliced
  • tablespoons soya sauce low-sodium
  • teaspoons vegetable oil; peanut oil preferred 
  • cups lentils dried red
  • 0.3 teaspoon salt 
  • tablespoon sesame seed toasted
  • 0.5 cup shallots finely chopped ( 4 medium)
  • 1.5 cups water

Directions

  1. Heat oils in a medium saucepan over medium heat.
  2. Add shallots; cook 3 minutes or until tender.
  3. Add lentils, 1 1/2 cups water, soy sauce, salt, and broth; bring to a boil. Cover, reduce heat, and simmer for 20 minutes or until lentils are tender, stirring occasionally. Stir in green onions.
  4. Sprinkle with sesame seeds.
