Ingredients

  • lb beefsteak tomatoes diced
  • 0.3 cup olives black pitted
  • large eggs 
  • 12 strips bacon lean
  • 10 oz the salad mixed
  • 10 oz peas frozen thawed drained
  • 0.5 cup ranch dressing 
  • cups sharp cheddar cheese diced shredded extra-sharp

Equipment

  • frying pan
  • paper towels
  • sauce pan

Directions

  1. Place eggs in a medium saucepan with cold water to cover. Bring to a simmer over medium heat.
  2. Remove from heat, cover pan and let stand for 10 minutes.
  3. Drain eggs and cool in ice water. Peel and set aside.
  4. Cook bacon in batches in a large, heavy skillet over medium heat until crisp, about 10 minutes.
  5. Drain on paper towels. Tear bacon into pieces.
  6. Arrange tomatoes, peas, Cheddar, olives, greens and bacon in layers in a large (5-quart), clear bowl with straight sides.
  7. Just before serving, quarter eggs and place on top.
  8. Serve with dressing on side or toss.
