If you’re looking for a salad that seamlessly blends refreshing crunch with vibrant, fresh flavors, the Shaved Fennel and Apple Salad is an absolute must-try. This dish stands out not only for its crisp textures and bright taste but also because it’s wonderfully inclusive—perfect for those following vegetarian, vegan, gluten-free, or dairy-free diets. Whether you want to serve it as a light starter, an elegant side dish, or a sophisticated snack, it fits effortlessly into any occasion.

The beauty of this salad lies in its simplicity and the harmony of its ingredients. Thinly sliced fennel provides a delicate anise-like flavor and a satisfying crunch, while tart Granny Smith apples add a juicy, crisp contrast that wakes up the palate. The fresh tarragon imbues an herbaceous note, elevating the dish with a subtle complexity. All of this is brought together by a tangy vinaigrette combining lemon juice, extra-virgin olive oil, and canola oil, balancing brightness with silky richness. It’s a flavor profile that’s light yet deeply satisfying.

Best of all, this recipe requires minimal time and equipment—a whisk, a bowl, and about 45 minutes from start to finish. Making it a fantastic option for both quick weekday meals and impressive gatherings. At around 211 calories per serving, it’s a nourishing choice, contributing a modest protein punch while being predominantly rich in heart-healthy fats and wholesome carbohydrates.
