  • teaspoon olive oil 
  • 0.3 cup onion finely chopped
  • 1.5 lb ground beef 
  • cups savory vegetable mixed frozen (from 12-oz bag)
  • tablespoons tomato paste 
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper 
  • 1.8 cups beef broth (from 32-oz carton)
  • tablespoons flour all-purpose
  • 20 oz potatoes refrigerated mashed

Directions

  1. Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  2. In 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 5 minutes, stirring occasionally, until soft.
  3. Add beef; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked.
  4. Drain.
  5. Add mixed vegetables, tomato paste, salt and pepper; cook over medium heat 5 minutes, stirring frequently, until vegetables are hot.
  6. Add beef to skillet; cook 5 to 7 minutes, stirring occasionally, until thoroughly cooked.
  7. Drain.
  8. In small bowl, mix broth and flour with whisk.
  9. Add broth mixture to beef mixture.
  10. Heat to boiling; cook 3 minutes, stirring constantly, until thick. Spoon beef mixture into baking dish.
  11. Spread mashed potatoes over beef mixture.
  12. Bake 20 minutes or until golden brown.
