Ingredients

  • slices bacon chopped
  • tablespoons butter 
  • large clove garlic minced
  • teaspoons juice of lemon 
  • tablespoons parsley chopped
  • servings salt and pepper to taste
  • cup scallions thinly sliced
  • cups sharp cheddar cheese shredded
  • pound shrimp deveined peeled
  • cup grits stone-ground
  • cups water

  • frying pan

Directions

  1. Bring water to a boil.
  2. Add salt and pepper.
  3. Add grits and cook until water is absorbed, about 20 to 25 minutes.
  4. Remove from heat and stir in butter and cheese.
  5. Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Cook until shrimp turn pink.
  6. Add lemon juice, chopped bacon, parsley, scallions and garlic.
  7. Saute for 3 minutes.
  8. Spoon grits into a serving bowl.
  9. Add shrimp mixture and mix well.
  10. Serve immediately.
