  • tablespoon bottled garlic minced
  • cups brown rice chilled cooked
  • 0.3 teaspoon pepper red crushed
  • teaspoons sesame oil dark
  • large eggs lightly beaten
  • teaspoon ginger fresh grated peeled
  • 0.5 cup spring onion sliced
  • tablespoons soy sauce low-sodium
  • 0.3 cup bell pepper red chopped
  • 0.5 pound shrimp deveined peeled
  • tablespoon water

Directions

  1. Combine shrimp, ginger, and crushed red pepper in a small bowl; let stand 5 minutes.
  2. Heat oil in a large nonstick skillet over high heat.
  3. Add bell pepper, green onions, and garlic; stir-fry 1 to 2 minutes or until tender.
  4. Add shrimp mixture to pan; stir-fry 4 to 5 minutes or until shrimp are done.
  5. Add cooked rice; stir-fry 2 minutes or until thoroughly heated. Push rice mixture to sides of pan, forming a well in center.
  6. Add egg to center of pan, and cook 30 seconds; toss with rice mixture, and stir-fry until egg is cooked. Stir in soy sauce and water; cook until thoroughly heated.
