  • cup breadcrumbs soft
  • large eggs lightly beaten
  • servings lime wedges 
  • servings napa cabbage 
  • 1.5 pounds shrimp fresh unpeeled
  • cup coconut sweetened flaked toasted
  • cups vegetable oil

Directions

  1. Peel shrimp, leaving tails on; devein, if desired.
  2. Dip shrimp in egg. Stir together breadcrumbs and coconut; dredge shrimp in mixture.
  3. Pour oil into a Dutch oven; heat to 37
  4. Fry shrimp, in batches, over medium-high heat 2 minutes or until golden.
  5. Drain on paper towels.
  6. Spoon Napa Cabbage Slaw evenly into 8 martini glasses. Top each with 3 fried shrimp.
  7. Garnish, if desired.
