Ingredients

  • slices bacon 
  • clove garlic finely chopped
  • cups rice cooked
  • cup peas sweet frozen cooked drained
  • 0.3 cup roasted peppers red drained chopped (from 7-oz jar)
  • tablespoons juice of lemon 
  • 0.3 teaspoon paprika 
  • drops hot sauce red
  • 12 oz shrimp frozen thawed deveined cooked peeled drained
  • serving romaine leaves

Directions

  1. In 12-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp.
  2. Drain fat, reserving 1 tablespoon in skillet.
  3. Drain bacon on paper towel.
  4. Cook garlic in bacon fat in skillet over medium heat about 1 minute, stirring occasionally, until softened. Stir in bacon and remaining ingredients except lettuce.
  5. Serve shrimp mixture on lettuce.
  6. Sprinkle with additional paprika if desired.
