Ingredients

  • 14.5 ounce canned tomatoes diced with green peppers and onions, undrained canned
  • tablespoon chili powder 
  •  chipotle chile in adobo sauce canned drained finely chopped
  • 8-inch warm flour tortillas ()
  • teaspoon ground cumin 
  • 1.5 cups onion thinly sliced
  • 0.3 teaspoon salt 
  • pound rump steak boneless trimmed ( 1/)
  • teaspoon sugar 

Equipment

Directions

  1. Preheat broiler.
  2. Combine first 3 ingredients.
  3. Sprinkle steak with chili powder mixture.
  4. Place on a broiler pan coated with cooking spray. Broil 4 minutes on each side or until desired degree of doneness.
  5. Let stand 5 minutes before slicing.
  6. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  7. Add onion; saut 4 minutes.
  8. Add tomatoes, chile, and sugar; bring to a boil. Reduce heat, and simmer, uncovered, 4 minutes. Thinly slice steak across grain.
  9. Serve steak with tomato mixture and warm tortillas.
  10. Note: Use your remaining chipotle chiles in adobo sauce in Chipotle Mashed Potatoes or Chipotle Black Bean Chili.
