Ingredients

  • 14.5 ounce canned tomatoes diced italian with seasonings canned
  • pounds skin-on chicken drumsticks 
  • 0.5  to 1 chipotle chile in adobo sauce canned mashed
  • teaspoon olive oil 
  • cup onion finely chopped
  • 0.3 cup water

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add chicken, and cook 5 minutes or until browned, turning often.
  3. Remove chicken.
  4. Reduce heat to medium; add onion, and saut 4 minutes or until just opaque.
  5. Add tomatoes, water, and chile pepper to onion mixture; stir well. Bring sauce to a boil; add chicken, and spoon sauce over chicken to lightly coat. Cover, reduce heat, and simmer 50 to 55 minutes or until chicken is done, turning occasionally.
  6. Place chicken on a serving platter, and spoon sauce over chicken.
