  • cups whole-kernel corn frozen divided thawed
  • teaspoon ground cumin divided
  • teaspoons butter light divided
  • cup poblano chile peppers divided seeded chopped ( 2 peppers)
  • 0.5 teaspoon salt

Directions

  1. Coat a large nonstick skillet with cooking spray; add 2 teaspoons light butter, and melt over medium-high heat.
  2. Add 1/2 cup chopped chiles, and cook, stirring constantly, 3 minutes or until tender.
  3. Add 1 1/2 cups corn and 1/2 teaspoon cumin; cook 2 minutes, stirring constantly.
  4. Transfer corn mixture to a large serving bowl; cover and keep warm.
  5. Repeat procedure with remaining ingredients.
  6. Add to reserved corn mixture. Toss with salt.
