Ingredients

  • medium potatoes - remove skin red unpeeled
  • slices bacon 
  • tablespoon canola oil 
  • 0.8 cup onion chopped
  • tablespoon flour all-purpose
  • tablespoon sugar 
  • 0.5 teaspoon salt 
  • 0.5 teaspoon celery seed 
  • 0.1 teaspoon pepper 
  • 0.8 cup water 
  • 0.3 cup apple cider vinegar 
  • teaspoons dijon mustard 
  • tablespoons parsley fresh chopped

Equipment

  • frying pan
  • paper towels
  • sauce pan

Directions

  1. In 4-quart saucepan, place potatoes.
  2. Add water just to cover.
  3. Heat to boiling; reduce heat to low. Simmer covered, 25 to 30 minutes or until tender.
  4. Drain; cool slightly.
  5. Cut into slices.
  6. Meanwhile, in 12-inch nonstick skillet, cook bacon over medium heat until crisp.
  7. Drain on paper towels. Chop bacon; set aside.
  8. Remove and discard bacon drippings from skillet.
  9. Add oil; heat over medium heat.
  10. Add onions; cook 3 to 4 minutes, stirring frequently, until tender. Stir in flour, sugar, salt, celery seed and pepper. Gradually stir in water, vinegar and mustard. Cook over medium heat 2 to 3 minutes, stirring constantly, until bubbly and thickened.
  11. Stir in potatoes and bacon. Cook, stirring frequently, until thoroughly heated. To serve, sprinkle with parsley.
