Ingredients

  • tablespoons pickling spice 
  • cups cilantro leaves fresh coarsely chopped (from 2 large bunches)
  • large garlic cloves peeled
  • teaspoons ground cumin 
  • teaspoon ground pepper black
  • slices lime fresh
  • tablespoons oregano fresh chopped
  • servings red-onion mojo 
  • 0.3 cup red wine vinegar 
  • 1.5 teaspoons salt 
  • 48 ounce skirt steaks 
  • 0.7 cup vegetable oil divided
  • cups water 

Equipment

Directions

  1. Preheat oven to 350°F.
  2. Combine first 9 ingredients in blender. Purée until marinade is almost smooth. Arrange steaks in 15x10x2-inch glass baking dish.
  3. Pour marinade over. Cover dish tightly with foil. Roast in oven 1 hour.
  4. Remove dish from oven; uncover and let steaks cool in marinade 2 hours. Cover and refrigerate in marinade overnight.
  5. Remove steaks from marinade and pat dry with paper towels.
  6. Sprinkle steaks on both sides with salt and pepper.
  7. Pour 1/3 cup oil into each of 2 heavy large skillets; heat over high heat until oil is very hot.
  8. Add 4 steaks to each skillet and cook until crisp outside, about 3 minutes per side.
  9. Drain briefly on paper towels. Arrange steaks on platter; spoon Red-Onion Mojo over.
  10. Garnish with lime slices and serve.
