  • 10  boston lettuce leaves 
  • small cantaloupe 
  • tablespoons mint leaves fresh chopped
  • teaspoons honey 
  • 10 ounce raspberries unsweetened frozen thawed
  • tablespoons raspberry vinegar

  • blender

Directions

  1. Place first 3 ingredients in a food processor or electric blender; process until pureed.
  2. Pour through a wire mesh strainer to remove seeds.
  3. Peel and slice cantaloupe.
  4. Place lettuce leaves and cantaloupe slices on 5 salad plates.
  5. Drizzle with raspberry sauce.
  6. Sprinkle with mint.
