Perfect for any occasion—lunch, dinner, or a casual gathering—this gluten-free masterpiece promises to satisfy both hearty appetites and sophisticated palates alike.

The star of this recipe is the succulent boneless sirloin steak, expertly grilled to achieve that perfect medium-rare finish, locking in its natural juices and flavors. As the steak rests, the vibrant roasted-corn salsa is prepared, combining the sweetness of fresh corn with the zesty kick of jalapeños and the aromatic touch of garlic and scallions. The addition of diced tomatoes and cilantro gives the salsa a refreshing note, making it the ideal companion to the juicy steak.

Not only is this dish visually stunning, but it also bursts with a medley of flavors that take your taste buds on a journey. Serve it with lime wedges to enhance the bright flavors, and you’ll have a gourmet meal that’s surprisingly easy to prepare in just 45 minutes. Whether you're hosting a dinner party or simply enjoying a cozy meal at home, Sliced Steak with Roasted-Corn Salsa will surely impress everyone at the table!

  • pound rump steak boneless thick trimmed
  • tablespoons butter unsalted

Equipment

  • bowl
  • frying pan
  • grill
  • kitchen thermometer
  • cutting board

Directions

  1. Prepare grill for cooking.
  2. Heat a dry large cast-iron skillet over moderately high heat until hot, then pan-roast corn, stirring occasionally, until golden brown, 8 to 10 minutes.
  3. Transfer to a bowl.
  4. Cook white part of scallions in butter with garlic, 1 teaspoon salt, 1/2 teaspoon each cumin and chili powder, and 1/4 teaspoon pepper in skillet over moderate heat, stirring, until scallions are tender, 3 to 4 minutes.
  5. Remove from heat and stir in corn, tomatoes, and jalapeños.
  6. Combine remaining 1/2 teaspoon salt, 1 teaspoon cumin, 1/2 teaspoon chili powder, and 1/4 teaspoon pepper and sprinkle on both sides of steak. Grill, turning once, until an instant-read thermometer inserted horizontally into thickest part of meat registers 130°F, 18 to 20 minutes total for medium-rare.
  7. Transfer steak to a grooved cutting board and let stand 5 to 10 minutes before slicing.
  8. While steak is standing, reheat corn mixture over moderate heat, stirring occasionally. Stir in cilantro and scallion greens.
  9. Spoon corn on top of sliced steak and pour over any accumulated juices.
