Ingredients

  • 14.5 oz canned tomatoes diced organic undrained canned
  • 10 oz enchilada sauce canned
  • 0.3 cup cilantro leaves fresh chopped
  • 16.4 oz rice 
  • oz cheddar cheese shredded
  • lb chicken breast boneless skinless cut into bite-size pieces
  • package taco seasoning

Directions

  1. Spray 4-quart slow cooker with cooking spray.
  2. Place cubed chicken in slow cooker.
  3. Sprinkle taco seasoning mix over chicken; stir, making sure all pieces are well coated. Stir in enchilada sauce and tomatoes. Stir once again until well combined.
  4. Cover; cook on Low heat setting 6 hours.
  5. Uncover; sprinkle cheese over chicken. Cover; cook on Low heat setting 10 minutes longer.
  6. Meanwhile, cook rice as directed on packages.
  7. Serve chicken over rice. Top with cilantro if desired.
