Ingredients

  • cups carrots sliced
  • cup celery stalks sliced
  • cup onion chopped
  • 1.3 lb chicken breast bone-in skinless
  • cups water 
  • cups chicken broth (from 32-oz carton)
  • 0.8 cup quick-cooking barley uncooked
  • 0.3 teaspoon pepper 
  • 14.5 oz tomatoes diced undrained canned
  • tablespoons parsley fresh chopped
  • teaspoon thyme leaves dried

Directions

  1. In 4- to 5-quart slow cooker, place carrots, celery and onion.
  2. Place chicken breasts on vegetables.
  3. Add remaining ingredients except parsley and thyme.
  4. Cover; cook on Low heat setting 8 to 9 hours.
  5. Remove chicken from cooker; place on cutting board.
  6. Remove meat from bones and chop into 1/2- to 1-inch pieces; discard bones.
  7. Stir chicken, parsley and thyme into stew. Increase heat setting to High. Cover; cook 10 to 15 minutes longer or until chicken is thoroughly heated.
