Ingredients

  • 16 oz baby carrots 
  • slices bacon 
  • 0.8 cup chicken broth (from 32-oz carton)
  •  bay leaves dried
  • 1.3 cups wine dry red
  • tablespoons flour all-purpose
  • tablespoons parsley fresh chopped
  • cloves garlic finely chopped
  • lb mushrooms fresh whole
  • oz pearl onions 
  • 0.3 teaspoon pepper 
  • teaspoon salt 
  • 1.5 lb chicken thighs boneless skinless
  • teaspoon thyme leaves dried
  • tablespoons water cold

Equipment

  • microwave
  • slow cooker

Directions

  1. Line microwavable plate with microwavable paper towel.
  2. Add bacon; cover with paper towel. Microwave on High 3 to 5 minutes or until crisp. Crumble bacon.
  3. Spray 5- to 6-quart slow cooker with cooking spray.
  4. Place chicken in cooker.
  5. Add carrots, onions, bacon, salt, pepper, thyme, garlic, bay leaves, wine and broth.
  6. Cover; cook on Low heat setting 8 to 10 hours.
  7. Skim any fat from surface of chicken mixture. Stir in mushrooms. In small bowl, mix flour and water; stir into chicken mixture. Stir in parsley.
  8. Increase heat setting to High. Cover; cook about 30 minutes longer or until mixture is thickened.
  9. Remove bay leaves before serving.
  10. Sprinkle with remaining chopped parsley.
