Ingredients

  • 2.5 lb chicken breast bone-in
  • tablespoons balsamic vinaigrette salad dressing fat-free italian
  • teaspoon seasoning italian
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper 
  • 0.3 cup olive green sliced
  • cloves garlic finely chopped
  • 14.5 oz tomatoes diced drained canned
  • 14 oz artichokes drained quartered canned
  • tablespoons parsley fresh chopped

Directions

  1. Spray 3- to 4-quart slow cooker with cooking spray.
  2. Remove skin and any fat from chicken.
  3. Brush chicken with dressing; place in cooker.
  4. Sprinkle with Italian seasoning, salt and pepper. Top with remaining ingredients except parsley.
  5. Cover; cook on Low heat setting 4 hours 30 minutes to 5 hours 30 minutes.
  6. Skim off any fat from top of mixture in cooker.
  7. Serve chicken and tomato mixture in shallow bowls; sprinkle with parsley.
