Ingredients

  • cloves garlic finely chopped
  • 0.5 cup salad dressing italian reduced-fat
  • oz mushrooms fresh whole
  • teaspoon salt 
  • 0.5 cup sun-dried tomatoes drained chopped in oil
  • lb tri-tip beef roast boneless

Equipment

  • frying pan
  • slow cooker
  • cutting board

Directions

  1. Spray 12-inch nonstick skillet with cooking spray. If beef roast comes in netting or is tied, do not remove.
  2. Sprinkle beef with salt and garlic.
  3. Place beef in skillet; cook over medium-high heat 5 to 6 minutes, turning occasionally, until brown on all sides.
  4. Spray 4- to 5-quart slow cooker with cooking spray.
  5. Place mushrooms in cooker.
  6. Place beef on mushrooms.
  7. Spread tomatoes over beef.
  8. Pour dressing over mixture in cooker.
  9. Cover; cook on Low heat setting 9 to 11 hours.
  10. Remove beef from cooker; place on cutting board.
  11. Remove netting or strings; slice beef.
  12. Serve mushrooms and juices with beef.
