  • 3.5 lb pork loin boneless
  • tablespoon vegetable oil 
  • teaspoon salt 
  • 0.5 teaspoon pepper 
  • cups rum peeled
  • medium onion sliced
  • cloves garlic peeled
  • cup chicken broth (from 32-oz carton)

Directions

  1. If pork roast comes in netting or is tied, remove netting or strings.
  2. Remove fat from pork. In 10-inch skillet, heat oil over medium-high heat.
  3. Sprinkle salt and pepper over pork. Cook pork in oil about 10 minutes, turning occasionally, until brown on all sides.
  4. In 4- to 5-quart slow cooker, place sweet potatoes, onion and garlic.
  5. Place pork on vegetables.
  6. Pour broth over pork.
  7. Cover; cook on Low heat setting 8 to 10 hours.
