Ingredients

  • pound round steak boneless
  • medium onion red cut into eighths
  • medium and orange peppers cut into 1-inch pieces (1 1/2 cups)
  • medium jicama peeled cut into julienne strips (1 1/2 cups)
  • tablespoon orange zest grated
  • 0.3 cup orange juice 
  • teaspoon ginger finely chopped
  • 0.5 teaspoon salt 
  • ounces snow peas frozen thawed
  • 6-inch wholewheat pita breads cut in half to form pockets (es in diameter)
  • serving mint-cilantro chutney spread shopping list

Directions

  1. Trim excess fat from beef.
  2. Cut beef lengthwise into 2-inch strips.
  3. Cut strips crosswise into 1/8-inch slices.
  4. Place beef, onion, bell pepper and jicama in 3 1/2- to 6-quart slow cooker.
  5. Mix orange peel, orange juice, gingerroot and salt; pour over beef and vegetables.
  6. Cover and cook on low heat setting 4 to 6 hours or until beef is tender.
  7. Stir in snap pea pods. Cover and cook on low heat setting about 15 minutes or until pea pods are crisp-tender.
  8. Spoon beef mixture into pita breads.
  9. Serve with Golden Fruit Chutney.
