Ingredients

  • tablespoon cornstarch 
  • cup apricot dried coarsely chopped
  • 0.3 cup dehydrated onion dried minced
  •  garlic clove sliced
  • 0.5 cup golden raisins 
  • 0.5 cup spring onion thinly sliced
  • 20 ounce dole pineapple tidbits drained canned
  • teaspoon pepper red
  • cup rice long-grain
  • 24 ounce chicken breast halves boneless skinless
  • pounds sweet potatoes and into peeled cut into 2-inch chunks
  • 16 ounce sesame-ginger dressing low fat
  • 1.3 cups water

Directions

  1. Place sweet potatoes, apricots, raisins, pineapple and garlic in a slow cooker coated with cooking spray. Top with chicken breasts and ginger dressing.
  2. Sprinkle with onion flakes and red pepper flakes. Cover and cook on LOW 5 to 6 hours or until chicken is tender.
  3. Combine cornstarch with reserved 2 tablespoons reserved dressing, and add to chicken mixture to thicken sauce.
  4. Prepare rice in a saucepan according to package directions using 1 cup water and cup reserved pineapple liquid in place of some of the water. Set aside and keep warm.
  5. To serve, spoon rice evenly onto 4 plates. Top each with a chicken breast and the sweet potato mixture.
  6. Sprinkle with onions.
