Ingredients

  • pound top round beef roast trimmed of fat
  • cloves garlic peeled
  • teaspoons pepper 
  • large onion thinly sliced
  • 0.5 cup beef broth (from)
  • 10  portugese rolls split toasted
  • large tomatoes cut into 5 slices

Equipment

Directions

  1. Make 6 evenly spaced deep slits in beef roast, using sharp knife. Insert garlic clove into each slit.
  2. Sprinkle pepper evenly over entire roast; rub pepper into roast.
  3. Spray inside of 3- to 4-quart slow cooker with cooking spray.
  4. Place onion slices in cooker; pour broth over onion.
  5. Add beef.
  6. Cover and cook on low heat setting 6 to 8 hours.
  7. Remove beef from cooker; place on cutting board.
  8. Cut beef across grain into thin slices. Return beef to cooker to moisten. To serve, fill each toasted roll with beef, onion and 1 tomato slice. Spoon small amount of broth from cooker over beef if desired.
