Ingredients

  • 31.6 oz blackeyed peas rinsed drained canned
  • tablespoon dehydrated onion dried chopped
  • 0.5 cup rice instant uncooked
  • 1.8 cups chicken broth reduced-sodium (from 32-oz carton)
  • 1.3 lb pork hock smoked
  • 0.5 lb andouille smoked cut in half lengthwise, then cut crosswise into 1-inch pieces

Directions

  1. Spray 3 1/2- to 4-quart slow cooker with cooking spray.
  2. Place pork hocks in cooker.
  3. Add 1 cup of the broth (refrigerate remaining broth). Top pork with onion, peas and sausage.
  4. Cover; cook on Low heat setting 8 to 10 hours.
  5. Remove pork from cooker; place on cutting board. Pull meat from bones, using 2 forks; discard bones, skin and fat. Return pork to cooker.
  6. Add remaining broth and the rice. Increase heat setting to High. Cover; cook 10 minutes or until rice is tender.
