  • pound pork loin roast boneless
  • cloves garlic 
  • teaspoons ground ancho chile pepper 
  • tablespoon ground cumin 
  • teaspoons ground pepper black
  •  lime cut into wedges
  • servings olive oil 
  • large onion quartered
  • tablespoons oregano fresh chopped
  • teaspoons salt 
  • tablespoon citrus champagne vinegar
