Ingredients

  • 1.3 pounds pork hock smoked
  • 0.3 cup onion chopped
  • 15 ounces beans red rinsed drained canned
  •  bay leaves dried
  • 15 ounces tomato sauce canned
  • tablespoon hot sauce red
  • 0.8 cup bell pepper coarsely chopped
  • cups water 
  • cups rice instant uncooked
  • teaspoons cajun spice 
  • pound andouille smoked fully cooked

Directions

  1. Place pork hocks in 3- to 4-quart slow cooker.
  2. Top with onion, beans, bay leaf, tomato sauce, pepper sauce and bell
  3. pepper in order listed.
  4. Cover and cook on low heat setting 8 to 9 hours.
  5. About 30 minutes before serving, heat water to boiling in 2-quart
  6. saucepan over high heat.
  7. Remove from heat and stir in rice. Cover and
  8. let stand about 5 minutes or until water is absorbed. Fluff rice with fork
  9. before serving.
  10. Meanwhile, remove pork from cooker; place on cutting board. Pull meat
  11. from bones, using 2 forks; discard bones and skin. Return pork to
  12. cooker. Stir in Cajun seasoning and sausage. Increase heat setting to
  13. high. Cover and cook 15 minutes or until sausage is heated through.
  14. For each serving, place 1/2 cup rice in soup bowl and top with 3/4 cup
  15. red bean mixture.
