Ingredients

  • 1.5 pounds flank steak 
  • 14 ounces tomatoes diced with garlic and onion, undrained canned
  •  jalapeno seeded chopped
  •  garlic clove minced
  • teaspoon ground coriander 
  • teaspoon ground cumin 
  • teaspoon chili powder 
  • 0.5 teaspoon salt 
  • medium onion sliced
  • medium bell pepper green julienned
  • medium bell pepper sweet red julienned
  • tablespoon cilantro leaves fresh minced
  • 12 6-inch flour tortilla warmed (es)
  • leaves cilantro leaves fresh sour

Directions

  1. Thinly slice steak across the grain into strips; place in a 5-qt. slow cooker.
  2. Add the tomatoes, jalapeno, garlic, coriander, cumin, chili powder and salt. Cook, covered, on low for 7 hours.
  3. Add the onion, peppers and cilantro. Cook, covered, until meat is tender, 1-2 hours.
  4. Using a slotted spoon, spoon about 1/2 cup meat mixture down the center of each tortilla. Fold bottom of tortilla over filling and roll up.
  5. Serve with toppings as desired.
