Ingredients

  • small avocado pitted ripe peeled chopped
  • 10 oz enchilada sauce canned
  •  onions coarsely chopped
  • cup pepper jack shredded
  • cups romaine lettuce shredded
  • cup tomato salsa 
  • teaspoon salt 
  •  taco shells hard
  • lb turkey breast bone-in fat removed

Directions

  1. Place onions in slow cooker.
  2. Sprinkle turkey with salt and place in slow cooker, meat side up. Cover and cook on low until internal temperature of turkey registers 165F on an instant-read thermometer, 4 to 6 hours.
  3. Remove turkey meat from bone, shred it, then toss with enchilada sauce.
  4. Place 1/4 cup turkey inside each taco shell and top with lettuce, avocado, salsa and shredded cheese.
