  • 30 servings boston lettuce leaves 
  • 0.8 cup capers drained
  • 30 servings optional: dill 
  • tablespoon ground mustard dry
  • pounds fish fillet smoked assorted (such as trout, whitefish and salmon)
  • 0.5 cup optional: dill fresh chopped
  • 30 servings pepper black
  • 0.3 cup juice of lemon fresh
  • 30 servings lemon wedges 
  • pound cocktail rye bread westphalian-style halved sliced
  • 0.8 cup spicy brown mustard (such as Gulden's)
  • 0.5 cup sugar 
  • 0.8 cup vegetable oil

Directions

  1. Mix first 4 ingredients in bowl. Gradually whisk in oil.
  2. Mix in capers, chopped dill and generous amount of pepper. (Can be made 3 days ahead. Cover; chill.)

  4. Garnish with lemon and dill sprigs.
