  • tablespoon capers finely chopped
  • tablespoon pickled cucumbers / gherkins finely chopped
  • teaspoons dijon mustard 
  • ounces gruyere cheese shredded
  •  baking potatoes cut into 1/8 inch-thick slices thin
  • tablespoons mayonnaise 
  • tablespoon olive oil 
  • 36 servings salt and pepper freshly ground
  •  spring onion finely chopped
  • 0.5 pound ham smoked lean finely chopped
  • teaspoon tarragon finely chopped

Directions
