  • 500 rice cooled cooked uncooked ( 300g rice)
  • bunch spring onion sliced
  • 0.5  cucumber deseeded sliced
  • small bag arugula 
  • 75 salmon smoked leftover
  • tbsp rice vinegar 
  • tbsp sesame oil 
  •  lemon zest 
  • tsp chilli sauce 
  • 0.5 tsp sugar

Directions

  1. Whisk the dressing ingredients and set aside. Toss together the salad ingredients in a large bowl with the dressing.
  2. Serve from the bowl or pile onto a serving platter.
