  • 20.5 inch thick diagonal crusty baguette 
  • 10 inch wedges fennel bulb fresh for garnish (from 2 large bulbs)
  • 10 servings olive oil 
  • 10 inch wedges onion red (from 2 large onions)
  • 13.5 ounce trout smoked skinless

Directions

  1. On separate baking sheets, arrange breadand vegetables; brush both sides with oiland sprinkle with salt and pepper.
  2. Prepare barbecue (medium-high heat)or preheat broiler. Grill or broil bread untilcrisp, about 2 minutes per side if grilled,and 1 to 2 minutes per side if broiled. Grillor broil vegetables until golden and justtender, about 4 minutes per side if grilled,and 3 to 4 minutes per side if broiled.DO AHEAD: Can be made 2 hours ahead.
  3. Letstand at room temperature.
  4. Arrange bread, vegetables, and trouton large platter.
