  •  belgian endives separated
  • tablespoon dijon mustard 
  •  apples i use 2 granny smith apples cored halved very thinly sliced
  • 1.5 tablespoons red wine vinegar 
  • 20 servings salt and pepper freshly ground
  • medium shallots chopped
  • 1.5 tablespoons sherry vinegar 
  • 2.5 tablespoons vegetable oil 
  • 1.5 tablespoons walnut oil 
  • 0.5 cup walnuts coarsely chopped
  • cup watercress sprigs 
  • 0.5 pound whitefish smoked boneless
