Ingredients

  • tablespoons adobo sauce from can 
  • tablespoon balsamic vinegar 
  •  chicken bouillon cube 
  •  chipotle pepper in adobo sauce canned
  • teaspoons garlic minced
  • teaspoon hot sauce 
  • tablespoon olive oil 
  • large onion chopped
  • 0.3 teaspoon salt 
  • 1.5 lb tomatoes coarsely chopped
  • 10 servings tortilla chips 
  • 0.8 cup water

Directions

  1. Saut onion in hot olive oil in a large saucepan over medium-high heat 5 minutes or until softened; add garlic, and saut 1 minute. Stir in tomatoes and next 7 ingredients. Bring to a boil; reduce heat, and simmer, stirring occasionally, 25 minutes.
  2. Remove from heat, and cool slightly.
  3. Remove chipotle pepper, if desired. Process tomato mixture in a food processor or blender until smooth. Cover and chill at least 8 hours.
  4. Serve at room temperature with tortilla chips.
