Ingredients

  • tablespoons vegetable oil 
  • lb ground beef 80% lean (at least )
  • teaspoon salt 
  • cup onion chopped (2 medium)
  • 15 oz kidney beans dark red rinsed drained canned
  • 14.5 oz canned tomatoes diced red yellow organic undrained canned
  • 12 oz beer ()
  • tablespoons chipotles in adobo finely chopped (from 7-oz can)
  • tablespoon tomato paste 
  • teaspoon ground cumin 
  • teaspoon chili powder

Directions

  1. In 3-quart saucepan, heat 1 tablespoon of the oil over medium-high heat.
  2. Add beef and 1/2 teaspoon of the salt; cook 5 to 6 minutes, stirring occasionally, until browned.
  3. Transfer beef to a plate; set aside.
  4. Drain fat from saucepan.
  5. Add remaining tablespoon oil to saucepan; add onions and remaining 1/2 teaspoon salt. Cook 3 to 4 minutes, stirring occasionally, until onions begin to brown.
  6. Return beef to saucepan. Stir in remaining ingredients. Cook 12 to 15 minutes or until thickened. If needed, season with salt and pepper.
