  • 0.3 cup cooking wine dry white
  • tablespoon chives fresh chopped
  • tablespoon flat-leaf parsley fresh chopped
  • tablespoon juice of lemon fresh
  • teaspoons tomatoes 
  • tablespoon olive oil 
  • 0.3 teaspoon paprika smoked spanish
  • teaspoons parmesan cheese fresh grated
  • 17 ounce polenta cut into 8 (1/2-inch) slices
  • pound shrimp deveined peeled

Directions

  1. Preheat broiler.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add shrimp to pan; saut 3 minutes or until done, stirring frequently.
  4. Remove from heat; stir in wine, chives, juice, and paprika, tossing to coat. Keep warm.
  5. Place polenta slices on a baking sheet coated with cooking spray. Top each slice with 1 teaspoon sauce and 1 teaspoon cheese; broil 3 minutes or until cheese melts.
