  • 0.3 cup curd cottage cheese 
  • 0.3 teaspoon basil leaves dried
  •  eggs beaten
  • large mushrooms fresh sliced
  • servings ground pepper black to taste
  • tablespoon jalapeno chopped
  • tablespoon olive oil 

Equipment

Directions

  1. Heat olive oil in a skillet over medium heat.
  2. Add mushrooms and peppers; saute until soft.
  3. Sprinkle with basil and remove from pan.
  4. Pour eggs into pan and return to heat. Cook eggs until semi-solid, then flip.
  5. Place mushroom mixture and cheese on top of omelet. Season with pepper and fold in half. Cook until firm.
  6. Serve warm.
