Ingredients

  • 0.3 cup chocolate chips 
  • 0.3 cup t brown sugar dark packed
  •  egg yolk 
  • 0.3 cup graham crackers crushed
  • 0.7 cup marshmallow creme 
  • 0.8 cup sugar 
  • 0.5 cup cocoa powder unsweetened
  • teaspoon vanilla 
  • cup whipping cream 
  • cups milk whole

Equipment

  • whisk
  • hand mixer
  • ice cream machine

Directions

  1. In large bowl, beat egg yolks and sugars with electric mixer on medium speed 3 to 4 minutes or until creamy and pale yellow. Beat in vanilla. Set aside.
  2. In 2-quart saucepan, heat milk, cream and cocoa over medium-high heat until bubbles start to form around edge of saucepan. Do not boil.
  3. Remove from heat.
  4. Add 1/4 cup of milk mixture to egg mixture; beat with whisk. Repeat this step 2 more times.
  5. Transfer egg mixture to saucepan; cook over medium-low heat until mixture thickens and coats back of spoon. Cool completely, about 30 minutes.
  6. Refrigerate mixture in saucepan until very cold, about 2 hours.
  7. Transfer mixture to ice cream maker.
  8. Mix about 15 minutes or until mixture begins to thicken.
  9. Add marshmallow creme by tablespoonfuls.
  10. Sprinkle in graham crackers and chocolate chips. Continue mixing according to manufacturers directions.
