Ingredients
- 4 chillies red
- 3 large cloves garlic
- 3 ginger fresh chunk
- 200 g caster sugar
- 400 g tomatoes chopped canned tinned
- 50 ml citrus champagne vinegar
Equipment

Directions
- Make a paste with the chillies, ginger and garlic. You can do this in a pestle and mortar or a food processor.
- Add the paste to a pan with all the other ingredients and stir well.
- Bring the mixture to the boil, then reduce to a simmer. Cook the mixture for 25-30 minutes until thick and glossy.
- Pour into a clean jar and keep in the fridge until you are ready to use it.
- The jam will keep happily in the fridge for a couple of weeks. It's never lasted longer than that so far.
