Suggestions

Ingredients

  •  chillies red
  • large cloves garlic 
  •  ginger fresh chunk
  • 200 caster sugar 
  • 400 tomatoes chopped canned tinned
  • 50 ml citrus champagne vinegar 

Equipment

  • food processor
  • frying pan
  • mortar and pestle

Directions

  1. Make a paste with the chillies, ginger and garlic. You can do this in a pestle and mortar or a food processor.
  2. Add the paste to a pan with all the other ingredients and stir well.
  3. Bring the mixture to the boil, then reduce to a simmer. Cook the mixture for 25-30 minutes until thick and glossy.
  4. Pour into a clean jar and keep in the fridge until you are ready to use it.
  5. The jam will keep happily in the fridge for a couple of weeks. It's never lasted longer than that so far.
  6. Enjoy!
