  • 1 tablespoon canola oil 
  • 2 teaspoons sesame oil dark
  • 1 tablespoon ginger fresh minced peeled
  • 1 tablespoon garlic minced
  • 0.3 cup soya sauce low-sodium
  • 0.5 cup mirin sweet rice wine
  • 1 cup onion sliced
  • 1 cup bell pepper red sliced
  • 0.3 teaspoon salt 
  • 7 ounce mushroom caps trimmed sliced
  • 1 cup snow peas trimmed halved
  • 8 ounces soba uncooked buckwheat noodles

Directions

  1. Cook noodles according to package directions; drain, reserving 1 tablespoon pasta water. Keep noodles warm.
  2. Heat canola oil in a large nonstick skillet over medium-high heat.
  3. Add ginger and garlic; saut 30 seconds.
  4. Add onion and bell pepper; cook 3 minutes or until golden brown, stirring often.
  5. Add mushrooms, salt, and reserved 1 tablespoon pasta water; cook 2 minutes or until mushrooms are tender, stirring frequently. Stir in snow peas, and cook 1 minute.
  6. Combine mirin, soy sauce, and sesame oil in a small bowl, stirring with a whisk.
  7. Add mirin mixture and noodles to pan; toss to combine.
  8. Serve immediately.
