Ingredients

  • tablespoon chipotle chiles in adobo sauce canned seeded chopped (1 to 2 chiles)
  • tablespoons cilantro leaves fresh chopped
  • cloves garlic coarsely chopped
  • tablespoons juice of lime 
  • tablespoons mayonnaise 
  • 0.5 cup olive oil 
  • 0.3 cup parmesan grated
  • 0.3 teaspoon pepper 
  • large heads romaine lettuce trimmed
  • 0.3 teaspoon salt 
  • cups coarsely tortilla chips crushed

Directions

  1. Combine garlic, chiles, adobo sauce, lime juice and mayonnaise in the bowl of a food processor and process until smooth. With blades in motion, slowly pour in olive oil. Pulse in Parmesan, salt and pepper. (Makes about 3/4 cup dressing. Can be made up to 3 days in advance. Cover and chill until ready to use.)
  2. Just before serving, toss lettuce with dressing, cilantro and crushed tortilla chips.
  3. Garnish salad with additional chips if desired.
