  • 15 ounce black beans canned
  • ounce chiles green chopped canned
  • 28 ounce canned tomatoes canned crushed
  • 14 ounce chicken broth canned
  • cups meat from a rotisserie chicken shredded
  • teaspoons chili powder 
  • 0.3 cup cilantro leaves fresh chopped
  • 10 ounce regular corn frozen
  • cloves garlic minced
  • tablespoon olive oil 
  •  onion chopped
  • teaspoon oregano dried
  • 0.5 cup water

Directions

  1. In a medium stock pot, heat oil over medium heat. Cook onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
  2. Stir in corn, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.
  3. Ladle soup into individual serving bowls.
  4. Serve with optional toppings, if desired.
