  • 30 ounces kidney beans white rinsed drained canned (cannellini)
  • teaspoons chili powder 
  • 10.8 ounces cream of chicken soup fat free 98% canned (Regular or )
  • 1.5 cups corn whole frozen
  • 0.8 cup bell pepper green chopped
  • teaspoons ground cumin 
  • cup onion chopped
  • tablespoons cheddar cheese shredded
  • pound chicken breast halves boneless skinless cut into cubes
  • tablespoon vegetable oil 
  • 0.8 cup water

Directions

  1. Heat the oil in a 4-quart saucepan over medium-high heat.
  2. Add the chicken, chili powder, cumin, onion and pepper and cook until the chicken is cooked through and the vegetables are tender, stirring often.
  3. Stir the soup, water, corn and beans in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes, stirring occasionally.
  4. Sprinkle with the cheese.
